Wulf's Kitchen: Shrimp Linguine with Tomato Sauce

Laughing Bird Organic Shrimp is a solid choice for an easy pasta dish. With the 61-70 size (that’s 61 to 70 shrimp per pound) you will get shrimp in every bite. These shrimp cook in a flash, and all the flavors of garlic, tomato sauce, and parsley complement them well.  

 

Serve with crusty bread to soak up all that sauce, and you’ve got yourself a winning meal in 20 no-stress minutes!  

Ingredients

  • 1 pound linguine or other long, thin pasta
  • 2 tablespoons olive oil
  • 3-4 cloves garlic, minced
  • 1 pound Laughing Bird Organic Shrimp, peeled and tail-off
  • 16-ounce jar of your favorite tomato sauce
  • ¼ cup finely chopped parsley, plus more for garnish

Instructions

1.

Bring a pot of salted water to a boil and cook pasta according to the package directions. Drain and set aside.

2.

Heat olive oil in a medium sauté pan over medium heat. Add garlic and cook until fragrant, about 30 seconds.

3.

Pour your tomato sauce into the sauté pan. Bring sauce to a low simmer and cook for 2-3 minutes.

4.

Add shrimp to the pan and increase heat to medium-high. Cook shrimp until they turn opaque, about 1 minute. Season with salt and pepper.

5.

Mix in the ¼ cup of parsley.

6.

Add the drained pasta to the sauce and toss to combine all ingredients.

7.

Serve pasta in bowls and garnish with additional chopped parsley.
